Did you know that myRegence.com has an entire database filled with healthy recipes and cooking videos? Here's an example of one of the many recipes available on myRegence.com:
Green Bean Potato Salad – Put a bit more of the garden in your potato salad.
1/2 pound green beans, cut into 1-inch lengths
2 pounds small red-skinned potatoes
1/4 cup white wine vinegar
1/2 shallot, diced
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons Dijon mustard
1 tablespoon extra virgin olive oil
2 tablespoons parsley, chopped
Cut potatoes into quarters and steam until tender but firm, about 7 minutes. Bring a medium saucepan of salted water to a boil and blanch the beans, about 4 minutes. Drain and rinse with cold water. Once the potatoes are cooked, put them in a bowl and add vinegar. Toss to coat and let sit 5 minutes. This allows the potatoes to absorb the vinegar. Add remaining ingredients to the potatoes and toss to coat. Cover and refrigerate overnight.
Serve potato salad cold or at room temperature. Serves 8.
